Rick said:Some oven chips and eggs, and a pound of sausages cooked a la Matthew Fort - heavy pan, very low heat, left completely alone for over an hour. Best sausages I've cooked in a very long time.

What did you find this did to the sausages that other methods wouldn't?

I need to repeat the experiment, but they seemed to me to be incredibly juicy and the flavours really "popped"; I've never been so aware of the spicing in a Cumberland sausage!

Fort suggests putting them on your lowest heat, possibly with a diffuser pad, for forty minute or so, but I have one extra-tiny gas ring on my range and needed it on about half to have it done after an hour. Apparently his Saturday morning process is to put the sausages on and go back to bed with a cup of tea Happy.

Definitely worth an experiment.

Nigel Slater-style (if slightly burned of skin) saute of whole bone-in chicken thighs in butter with green beans, white wine, mustard, lemon and cream. So good. Piece of oatmeal bread afterwards to sponge up the fantastic sauce.

Will definitely be doing this and variations again.

Why did you put a packet of ham on a chicken sandwich?

Chorizo buritto with salad and rice, followed by a sharing platter of nachos with beef, refried beans, guacamole etc. On my own. Then a litre of water when I got home. Not able to get out of bed now due to the pain i'm in.
