Thank you. I hardly cook these days, at least this situation has got that again. I'm no substitute for a good restaurant, though.

Pork loin with green chillis (six medium, seeds and all); Sichuan dry-fried green beans without the ingredient I just this second realised I forgot; Jasmine rice. Pork delicious, beans not bad considering.

The beans: par-boil green beans for a couple of minutes, rinse in cold water, leave to drain.

Fry some cut up dried Sichuan chillis and szechuan peppercorn for a few seconds until the chillis start to change colour, then add about three cloves thinly sliced garlic and the same of ginger, stir until it starts to smell good, then (I forgot) add some yu cai (I was going to use nduja, in fact; you could add a little minced pork or bacon at the start instead), then add the beans and fry for a few minutes. Season with salt, plate, sprinkle with sesame oil.

The pork with chillis is based on this, with not enough chilli (I used all I had), and no lard or MSG because I didn't have them either, and the knife skills of a small child by comparison:



I also don't have a wok range like a f**king jet engine, more's the pity.

Pork and peppers again. The veg dish was tasty but ugly, so no share there.

Bought a new induction bowl burner (for woks) and resurrected my old wok that I haven't been able to use since I moved to an apartment with no gas cooking.

Made another two Fuchsia Dunlop recipes, both new to me: broad beans with ya cai, and sichuan chicken livers with celery.
