Hi matt, I would suggest you add some sort of oily fish( mackerel/sardines), loads of veg, the shake b4 bed if whey add some flaxseed oil to slow the release of the protein, use free range eggs ( less cholestorol/ more omegas), use 1% milk( really cheapnin farm foods/tesco). As said b4 see how it goes after a week or two and adjust accordingly.

Hi Mat.
I would suggest maybe a protein shake blended into your oats for breakfast as there is not enough protein in the first meal of the day. Could also throw some udos oil into that shake. For some fats.
Also get something similar into you before training and some simple carbs and fast acting protein in after trianing
And as said above some oily fish is always great.

I'd go with blended oats with a banana or two instead of a mass gain powder if you want extra carbs - you will get some fibre and slower digestion from these than from the cheap processed carbs most weight gainers are full of.

I use this principle (excuse the spellin) in my pre workout drink, I have three or four eggs about 50g of oats a banana two scoops of protein shake milk wisk it all up toegethe taste good and gives me energy all threw my workout, I have it about a hour before I workout and it doesn't sit on my gut lol washed down with lucazade and I'm well away,

Can't beat a scoop of protein and half a scoop of dextrose immediately before a workout. The same then straight after.

Looks to me like really a quite strict diet!
Weres the beef burger?
The mcdonolds?
I'm no expert by FAR but treat your self more often than one day a week!
I would say you don't need loads of protain but plenty of CARBS!
