Rick, you're a foodie... What sauce would you serve with a beef rib like that? It's a very rich and smokey meat, that carries a huge beef flavour. I was pondering a string punchy garlic sauce, or salsa verde, but not sure.

They both sound good. Chimichurri (which I doubt I can spell) is the other thing that springs to mind. If that were a menu I'd probably pick the garlic, though, sounds like a great plan.

I'll work on some recipes, but I think the powerful garlic goodness should cut right through it.

I do love garlic.

I've done a few pulled pork cooks, but I'm not really a fan of it. I think I've had far too many bad types of pulled pork that the good ones are few and far between. That being said, I'm still going to do one in a week or two just to see how it goes.

Pulled pork is arguably my favourite burger topping next to cheese.
