Been listening to Just One Thing health show on Radio 4. Every week they do a show with a healthy fad that may make you healthy. Recently they did one on fermented, see foodhttps://www.bbc.co.uk/sounds/play/m000v3g2

Anyone making their own kifer, Kimchee or kombucha got a good recipe? I'd kifer grain before but it always tasted like sparkling sour milk. I wouldn't mind a breakfast I can actually keep down without holding my noseHappy

Thanks JT looks interesting. Do you use the book much or is it full of hard to find ingredients and difficult to use please?

It has been helpful but yes there are a few bits which make you think "too difficult"

I was making basic sauerkraut before getting the book and still prefer that just use any hard veg you get cheap, Probably the best place to start.

My wife has made kimchee (don't quite taste like the real Korean deal) and Kombucha which she had to get a starter for from a Health food shop.

Sounds like good advise on the kraut. Will start there and see if it improves my health and bbq accompaniments.

I got a kimchi starter culture from my local asian supermarket today. I've now prepped everything and it's in a jar to ferment.

I also got a kombucha scoobi and Ginger beer grain. I'm waiting for the tea to cool in my killeen tap jars. Will add steps if they taste good.

I got a jar of saurkraut and have a bit with my dinner ....also i have been having one of those actimel yogurts and along with not eating after 6pm ..... you feel amazing

oh and some chia seeds in a bit of yogurt does wonders for all your innards.

If you bought your Sauerkraut from a shop there is a good chance it has been pasteurised which sadly kills of the good bacteria.

Still a tasty snack though.

I did read somwhere (possibly reddit) about the pasturised thing ..... but i do plan on making my own .....the stuff STINKS out the wagon though !!!

i make bone broth pretty regularly and drink it , its supposed to be good for gut health , doesn't taste great though.

Kimchi tastes pretty good. I've some spice bag mix seasoning and going to try a bbq with it as my side tomorrow (weather permitting.) A 3 pound cabbage turned out to be slightly less than a 500g jar after salting and draining the cabbage. Will try making 3 cabbages next time.

Disappointingly the ginger beer may be infected. I used Milton to sterilize everything, but must have missed something. There is a sperm like goo on top. It tastes like ginger, so haven't tossed it yet. I'm hoping it's like a Belgian Sour Beer accident and not garbage waterHappy

My Mrs makes a vegi Reuben sandwich. Rye bread, sour kraut, gorgonzola and shallots (salted). Once the sandwich is made heat both sides of the bread in a griddle pan until it's warms through and the cheese is melting. Prefer it to my memory of the bacon version.

A good kimchi is a real treat, especially when eating fat rich meats. One of my fave combos is a hotdog with kimchi and sriracha sauce.
