What is worse....a hitched deadlift on a stiff bar/slim plates, or a strict deadlift on a snappy oly bar with bumper plates?

I've never tried it, but I'm thinking I could probably get 320 with the 25kg bumpers at my gym. Must have been some seriously fat plates to run out of bar at 200kg?
