Thank you, gentlemen, I feel accompanied and beloved now Happy. Drew, that sounds great - so much of your food sounds excellent to me!

The Drunken Butcher (who ran the supper club at the weekend) mentioned that he confits his poultry sous vide rather diffidently to me, so I tried his method: 63.5C for 24 hours. Then chilled, fridged, and refried hard.

Thighs, bone-in but loosened, with broccoli, swede chips, and a sauce made from white wine, cream, gorgonzola, the jelly from the confit bag, tarragon, and mustard - haven't done this for a while. The broccoli was too soft for perfection, but the rest of it was not bad at all, and the chicken was lovely.

Andy, Andy, Chris and I went to the Cherry Tree after training; two courses for fifteen quid or three for twenty.

They had black pudding potato cake with egg and hollandaise, followed by fish and chips.
