Would eggs be a perfect substitute for meat?

very interesting information VG.

I have been lead to believe that there are "good" and "bad" types of fat, however people who say that tend to contradict each other on which is good and which is bad. Iv heard that saturated fat is good and unsaturated is bad (and vice versa), animal fat is bad and vegetable fat is bad (and vice versa) and many other variations of these. is there a definite answer?

A definite answer with blanket accuracy? No, mate.

I have a few rules I try to stick to and keep my athletes to.

Actively seek out fats from natural sources, that haven't been chemically modified or heat treated.
Actively avoid any processed foods that have had fats added to them during the process.
Try to balance sat / unsat ratios at 50:50 regardless of total quantities.

To give you an idea, a typical day's meals for me might looo like this (only listing fat relevant foods)

Breakfast. 4 large eggs, 50gr grated mozzarella
Shake. Fat only from whole milk (more to do with digestion than avoiding fat itself)
Lunch. 200gr Tuna steak. Coconut oil (cold pressed). Peanut butter (whole).
Tea. 250gr Chicken thighs. 85% dark chocolate. Almonds.

So as you can see, I try to get a variety, but certainly not shying away from fat! It currently makes around 30-35% of my total energy consumption.

fat usually tastes good. However I have recently had an unfortunate incident with buying 7kg of cheap minced beef which is pretty unpleasant. It seems to be very fatty and it just tastes grainy and horrible

No sweat. It's something that is really accelerating in terms of research and knowledge at the moment, particularly with the whole sugar / obesity thing kicking off. It's interesting stuff, and certainly confusing (I'm not saying for a second that I'm an expert!)

There was a show about fat guidelines on bbc radio4 a couple of days ago talking about this docs article; http://www.express.co.uk/life-style/health/438600/Eating-fat-i...
Might be on podcast. Said the original UK guidelines made by a civil servant with no background in science or medicine. He was on the show. Based his guidelines on a Russian experiment where a Dr fed rabbits fat and they died of heart disease. He concluded fat made heart attacks.
However when they tested the findings on omnivores it was proved false. Unfortunately the original assumption that fat caused heart attacks had become bro-science worldwide. Industry went about swapping fat with sugar and claiming it was healthy.
Atkins is probably the most scientifically reviewed diet and is all about eating fats proteins and low carbs and no processed food.
All the vitamins are in egg yolks.

The original "eggs are bad for you" cholesterol hype came from a study, commissioned in the 1950s, by the American Cereal Marketing Board aimed at discouraging people from eating eggs in the morning; in favour of cereal.

It was the first - and perhaps most successful - example of a corporate sponsored scientific study being used for day-to-day sales and marketing purposes; and did not differentiate between HDLs and LDLs; instead putting everything under the banner of the dreaded 'cholesterol'.

Having said that, I would imagine that a diet with protein from a variety of animal sources would be the best (and certainly most palatable) way to eat.
